I was looking for a vegan meal that the whole family would enjoy! This one… hit the spot. The whole family enjoyed it. Would love to hear if you try it, how you like it.

Califlower Tacos
Equipment
- Knife
- Cutting Board
- small blender or food processor
Ingredients
- Roasted Califlower
- Shredded Red Cabbage
- Tortilla I use Mission carb balance
- Avacado Creme
Roasted Califlower
- 1 head Califlower Cut into small florets
- 2 tbsp Taco Seasoning
- 2 tsp Paprika
- 3 tbsp Avacado Oil
- 1 squeezed Lime Juice
Avacado Creme
- 1 Avacado Cut into smaller pieces
- 1 Clove Minced Garlic
- 1/2 Cup Vegan Sour Cream or Vegan Maynoase
- 1/2 tsp himalayan salt
- 1/4 cup lime juice
- 3 pinches Cilintro Used fresh cilintro
Instructions
Roasting Califlower
- Preheat oven to 400 degrees fahrenheit
- In a large bowl toss cauliflower with taco seasoning, avacado oil and lime juice then spread out on a large baking sheet.
- Place on center rack and bake for at least 30 minutes or until cauliflower is tender with crispy edges. The time it takes to roast will depend on the size of your califlower florets.
- While cauliflower is roasting prepare avocado creme.
Avavado Creme
- Place all ingredients in a blender or food processor and blend until smooth.
Assemble the Califlower Taco
- Warm tortillas in a small fry pan on the stove. Do not add oil. Keep the heat between 2-3 on the stove. And warm for 1 minute.
- Put the shredded cabbage down the middle of the tortilla
- Place the roasted califlower ontop of the shredded cabbage
- Drizzle with Avacado Creme
- Top with fresh Cilantro and Avacado
- Fold Taco & Enjoy
Notes
Highly reccmend using a high smoke point oil like avacado and grape seed oil. Avacado goes great with this particuler recipe.
